I made these for my hubby tonight. So the ingredient list is for 2 good sized tacos.
1 portabello mushroom
2 cloves of garlic
3 tbsp red pepper hummus
2 whole grain tortillas
salt,pepper and hot pepper flakes
Chop up the portabello mushroom, zucchini and onion (reserve some onion for the top of the taco). Saute in some olive oil. When they have taken on some color from carmelization grate in 2 garlic cloves. Salt, pepper and add 1/2 tsp of red pepper flakes. Heat up another pan to heat up the tortillas. Spread 1.5 tbsp on each tortilla. Top each tortilla with half the veggie mix. Top with shredded lettuce, chopped tomatoes and the reserved onion. Fold over and enjoy.
My husband said this was the best taco he has had in he didn’t know how long. Even topped tacos he has had back when we were eating meat and dairy. The red pepper hummus has a really cheesy kind of taste but there is no cheese. Just pure yumminess!
