Coleslaw Sandwich Topping

This is the perfect topping for a sandwich.
1 medium green cabbage shredded finely
1/4 cup rice wine vinegar
2 tbsp grapeseed oil
1 tbsp organic sugar
2 tsp frank’s red hot sauce
1 tsp dried thyme
1 tsp dried oregano
salt and pepper to taste.

Mix the vinegar, oil, sugar, hot sauce, thyme and oregano together and pour over the cabbage. Mix well. Season with salt and pepper to taste. This should be refrigerated for 1 hour to develop the flavors but I used it right away and it was delicious.
I toasted to sliced of whole grain sourdough bread, spread vegenaise on both sides, top with sliced tomatoes and the slaw. It was very good.
